Quality Management of Acid and Milk Products by Improving the Technology of their Enrichment of Regionally Significant Micronutrients

The article emphasizes the social importance of the filling micronutrients deficiency by enriching with dairy products of inhabitants in some regions. The possible degree of risk and information uncertainty in the introduction of enriched dairy products is discussed. The SWOT analysis is used by substantiation of the methodology for the production of enriched dairy products. Suggestions and substantiation of the nutritious principles by enrichment in relation to production of the dairy milk products enriched with deficient bioelements and vitamins in a food allowance of inhabitants of the Orenburg region are resulted. The sources of replenishment of regionally important micronutrients are researched. The general scheme of creation dairy products enriched with regionally significant bioelements and vitamins is suggested. The technology enrichment of dairy products on the basis of standard technological instruction TTI GOST 31453-022 is invented.
